05 - 2 cups chicken, cooked and pulled apart
06 - 1 cup cream cheese, softened so it mixes easily

→ Assembly

07 - Beat 1 large egg (used for sealing edges)
08 - 12 wrappers for egg rolls
09 - Oil for frying or brushing, depending on your cooking method

→ For Serving

10 - Blue cheese or ranch dressing for dipping
11 - Extra buffalo sauce for adding more spice

# Instructions:

01 - Grab a big bowl and toss in the shredded chicken, buffalo sauce, softened cream cheese, cheddar, and green onions. Stir it all together until it's evenly mixed. Have a quick taste and throw in salt and pepper if you feel it needs it.
02 - Lay out an egg roll wrapper so it looks like a diamond. Scoop about 2-3 tablespoons of that tasty filling onto the center. Fold it up from the bottom, tuck in the sides, then roll it up tight toward the top. Dab a little beaten egg along the edge as glue to seal it in place.
03 - Pour about an inch of oil into a wide skillet and heat it up over medium. When it's nice and hot, cook your rolls a few at a time. They should sizzle and turn golden brown after 2-3 minutes per side. Let them drain on a paper towel so they stay crispy.
04 - Crank your oven up to 425°F (220°C). Set the rolls on a tray covered with parchment paper, give each one a light brushing of oil, then pop them in the oven for 15-20 minutes. Don’t forget to flip them halfway so they cook evenly.
05 - Serve them up while they’re still hot and crispy. Don’t skimp on the ranch or blue cheese dressing, and top it off with some extra buffalo sauce if you’re feeling bold!

# Notes:

01 - Prepare these ahead of time and freeze uncooked. Add a couple of extra minutes to your cooking time when ready to cook.
02 - Customize the spiciness to your liking by tweaking how much buffalo sauce you use.
03 - A fun sauce idea: mix a bit of buffalo sauce right into ranch dressing!
