Start by setting 2 bread slices on a flat surface like a board. Spread Swiss cheese, either grated or sliced, evenly onto each piece. Add a good splash of thousand island dressing over the cheese. Lay slices of beef or pastrami in an even layer on both slices. Sprinkle sauerkraut on top, then cap it off with the second slice of bread. Butter the top slice (outer side) with 1 tablespoon of softened butter.

Warm a large pan over medium heat. Lay your sandwiches in, buttered side hitting the pan first. Let them cook for 3 minutes until the bread gets nice and crispy. Quickly butter the top side before flipping the sandwich. Cook for another 2 or 3 minutes until the cheese has melted and both sides are golden.

Cut the sandwiches and dish them out while the cheese is still warm and stretchy.
