In a big bowl, cream together the sugar and butter until smooth and fluffy (about 2-3 minutes). Stir in the egg and the extracts until everything looks well mixed.

Sprinkle in the gelatin mix and stir until the dough takes on a nice pink shade.

In another bowl, whisk together the flour, salt, and baking powder. Slowly mix these dry ingredients into your pink, fluffy mixture until you’ve got a soft dough.

Roll a tablespoon of dough into a ball and place each ball onto a baking sheet lined with parchment. Press your thumb into the top of each one to make a little indent for the chocolate later!

Bake the cookies in a 350°F oven for 10-12 minutes, until they're firm at the edges but still soft in the middle. Leave them on the baking sheet for a couple minutes to settle.

While the cookies are warm, press a chocolate kiss into the thumbprint. Then carefully move them to a cooling rack.

Wait till the cookies are fully cooled and the chocolate is set. Then lightly sprinkle powdered sugar on top for a festive touch!
