Place cream cheese in a large bowl that’s microwave-safe. Heat for 10 seconds, then mix in sugar and mint extract until it’s got a frosting-like texture. It should take around a minute of whisking.

Slowly stir in milk, cream, and food coloring (if using). Mix everything together until the sugar is completely gone and it looks smooth.

Pour the blend into a Ninja CREAMi™ Pint. Close it up with the lid and let it freeze for a full day—24 hours.

Once frozen, take off the lid and set the pint into the outer bowl. Lock the Creamerizer™ Paddle onto the lid, attach it all to the motor base, and hit the ICE CREAM button.

Dig a hole about 1½ inches across into the middle of your ice cream. Pour the chocolate chips into the opening, then press the MIX-IN program to combine.

Scoop out the ice cream and serve it straight away with any extras you’d like on top.
