Peppermint Meltaways (Print Version)

# Ingredients:

01 - 1/2 cup powdered sugar.
02 - 1 cup butter, at room temperature.
03 - 1 1/4 cups plain flour.
04 - 1/2 teaspoon mint extract.
05 - 1/2 cup cornflour.
06 - 2 tablespoons of softened butter for icing.
07 - 1/4 teaspoon mint flavoring for icing.
08 - A couple drops of red food dye (optional).
09 - 2 tablespoons low-fat milk.
10 - 1 1/2 cups of powdered sugar for icing.
11 - 1/2 cup crushed peppermint bits.

# Instructions:

01 - Mix the butter and sugar until light and fluffy (takes about 3-4 minutes). Stir in the mint flavoring.
02 - Stir together the flour and cornstarch, then slowly add to the butter mixture as you beat it.
03 - Once mixed, cover and set in the fridge for about 30 minutes so it can firm up.
04 - Turn the oven on to 350°F and get it preheating.
05 - Roll into small 1-inch balls, spacing them 2 inches apart. Bake for 9 to 11 minutes, just until the bottoms are lightly golden.
06 - Move the cookies over to cooling racks and let them settle until they're fully cool.
07 - Whip the butter, milk, and mint extract with some red food dye. Slowly mix in powdered sugar until smooth.
08 - Spread frosting over the cooled cookies. Sprinkle the peppermint pieces on top.

# Notes:

01 - Keep the cookies fresh in a sealed container.
02 - The cornstarch makes these super soft.
03 - You can add a pink tint to the icing if you'd like!
