Fresh Veggie Sandwich (Print Version)

# Ingredients:

→ Pickling Mix

01 - Juice from 1 lime or lemon
02 - Thinly sliced red onion, 1/2 piece
03 - Season with salt and pepper, as needed

→ Herbed Cheese Blend

04 - 4 oz of cream cheese, softened
05 - Nonfat Greek yogurt, 3/4 cup (Fage works great)
06 - Kosher salt, 1/2 teaspoon
07 - Cracked black pepper, to suit your taste
08 - Onion powder, 1/2 teaspoon
09 - Fresh dill, chopped, 1 1/2 tbsp (or dried, 3/4 tsp)
10 - Chopped parsley, 2 tbsp fresh (or 1 tsp dried)
11 - Minced chives, 1 tbsp (optional but tasty)

→ Base Layer

12 - A sliced loaf of sourdough bread
13 - 6 tbsp softened butter, optional

→ Veggies & Toppings

14 - 2 medium avocados or 1 large
15 - 2 big heirloom tomatoes
16 - Juice from half a lemon
17 - 1 large cucumber, sliced thinly
18 - 1 small package of spinach leaves
19 - Sprouts or microgreens, 1 package
20 - 6 pieces of Havarti cheese, optional

# Instructions:

01 - Toss thin onion slices in a bowl with juice from a lime and a pinch of salt and pepper. Stir occasionally and leave it while prepping other items.
02 - Blend softened cream cheese and yogurt until smooth. Sprinkle in salt, onion powder, cracked pepper, and your choice of herbs. Stir everything until creamy and well mixed.
03 - Move the oven rack near the broiler. If using butter, spread it onto sliced bread. Broil for 2–4 minutes, watching closely to avoid burning.
04 - Thinly slice the cucumber. Cut up tomatoes and sprinkle them with salt and pepper, setting them on paper towels to drain. Mash the avocados with a bit of lemon juice and salt for flavor.
05 - Spread avocado mash on one slice of bread and the cream cheese on the other. Stack spinach, tomatoes, cucumbers, pickled onions, sprouts, and optional Havarti in layers. Cut in half and enjoy right away.

01 - Double the cheese mix and use it as a dip for veggies or chips.
02 - Green onions work as a stronger-tasting swap for chives.
