# Ingredients:

→ Egg Roll Filling

01 - 2 tbsp cooking oil
02 - 1/2 cup cooked black beans, drained and rinsed well
03 - 1 shredded chicken breast (8 oz)
04 - 1/2 cup corn kernels (anything from canned, fresh, or thawed frozen works)
05 - 1/3 cup spinach, chopped small (thawed frozen)
06 - 1/4 cup red bell pepper, diced finely
07 - 2 tbsp minced fresh cilantro
08 - 10-12 wrappers for egg rolls
09 - 1 jalapeño, minced finely
10 - 3/4 tsp cumin powder
11 - 3/4 tsp chili powder
12 - 1/2 tsp seasoning salt
13 - 1/4 tsp cayenne (optional, for heat)
14 - 2 tbsp chopped green onions (scallions)
15 - 1 cup Monterey Jack cheese, shredded
16 - Enough frying oil (for deep-frying)

→ Avocado Ranch Sauce

17 - 2 heaping tbsp fresh cilantro, finely chopped
18 - 1 small avocado, mashed smooth
19 - 1/2 cup ranch dressing of your choice
20 - 2 tbsp buttermilk
21 - 1/4 tsp onion powder
22 - 1/4 tsp garlic powder
23 - 1/4 tsp salt (adjust based on taste)
24 - 1 and 1/2 tsp lime juice

# Instructions:

01 - Heat oil over medium in a large skillet. Begin by sautéing diced red peppers until they soften up. Add in the corn, onions, jalapeño, black beans, spinach, and seasonings (salt, chili powder, cumin, and cayenne). Let everything sizzle together for 3-4 minutes till tender and fragrant.
02 - Scoop the softened veggie mixture into a big bowl. Toss in shredded chicken, chopped cilantro, and grated cheese. Mix it up thoroughly so you get an even blend.
03 - Place a wrapper flat on a clean surface, set a quarter cup of filling in the center, and fold up the bottom half. Pull the sides inward and roll everything up tightly. Seal the top edge with a little water so it sticks. Repeat till all wrappers are stuffed.
04 - Heat your frying oil to 375°F (190°C). Gently fry a few egg rolls at a time for around 3-4 minutes till they’re crunchy and golden. Drain off excess oil on paper towels.
05 - Blend the mashed avocado with ranch dressing, lime juice, buttermilk, salt, onion powder, garlic powder, and chopped cilantro till smooth and creamy. Pair this dip with your yummy egg rolls!
