Sun-dried Chicken Pasta (Print Version)

# Ingredients:

01 - 2 chicken breasts, sliced into even, thin strips
02 - 8 ounces of fettuccine noodles

03 - 1/2 cup grated Parmesan cheese
04 - 1 cup of rich heavy cream
05 - 1/2 cup of chicken broth

06 - 1/4 teaspoon red pepper flakes (if you like a bit of heat)

08 - 1 teaspoon dried Italian herbs
09 - 3 fresh garlic cloves, minced finely

11 - A pinch of fresh ground black pepper and sea salt, adjusted to taste
12 - 2 tablespoons olive oil of good quality
13 - 1/2 cup of chopped oil-packed sun-dried tomatoes

# Instructions:

01 - Bring a big pot of salted water to a rolling boil and cook the fettuccine until it’s just firm to the bite. Save a half cup of the pasta water—it’s amazing for thinning the sauce later. Once drained, set it aside.
02 - Heat up a generous splash of olive oil in a skillet while the pasta boils. Toss the chicken strips with pepper, salt, Italian herbs, and garlic powder, then cook them in the pan for 4-5 minutes each side until nicely golden and fully cooked. Set the pieces aside to rest.
03 - Use the same skillet and drizzle in a bit more olive oil. Toss in the sun-dried tomatoes along with the minced garlic, stirring for a couple of minutes until everything’s fragrant and sizzling.
04 - Turn the heat down to medium, then add the chicken broth and heavy cream to the skillet. Mix in the Parmesan and sprinkle in the red pepper flakes if you like things spicy. Let it bubble gently for a few minutes while it thickens nicely.
05 - Now, stir everything together! Add the pasta and seared chicken into the creamy skillet. Toss to coat, adding reserved pasta water slowly until everything’s just the right silky texture.
06 - Before serving, sprinkle fresh basil on top and an extra handful of Parmesan if you’d like. Enjoy while it’s hot and extra creamy!
