Easy Cheese Stuffed Manicotti (Print Version)

# Ingredients:

→ Pasta

01 - 8 manicotti tubes

→ Sauce & Cheese

02 - 1/2 cup Parmesan, shredded
03 - 2 cups mozzarella, shredded (save a bit for the top)
04 - 15 ounces ricotta, creamy
05 - 24 ounces marinara, jarred or homemade

→ Seasonings & Binders

06 - A sprinkle of black pepper
07 - Chopped parsley, 2 tablespoons fresh
08 - 2 big eggs
09 - 1/2 teaspoon salt

# Instructions:

01 - Follow the instructions on the package to cook the manicotti. Once drained, arrange them on parchment for cooling.
02 - Fire up your oven to 350°F. Coat the bottom of a 9x13 pan with cooking spray, then spread a thin layer of marinara sauce across it.
03 - Stir together the ricotta, both cheeses, parsley, eggs, salt, and pepper until really smooth and creamy.
04 - Carefully fill each cooled manicotti tube from both ends with the cheese mix. A spoon, pastry bag, or even clean fingers work great.
05 - Place the filled pasta shells in one layer over the sauce in the pan. Spread the remaining marinara evenly on top.
06 - Cover the pan with foil and bake for 40 minutes. Take off the foil, sprinkle extra mozzarella on top if you'd like, and bake another 5-10 minutes uncovered till it’s all melted.

# Notes:

01 - Let it sit for 5-10 minutes before cutting so the cheese sets up nicely.
