Follow the instructions on the package to cook the manicotti. Once drained, arrange them on parchment for cooling.

Fire up your oven to 350°F. Coat the bottom of a 9x13 pan with cooking spray, then spread a thin layer of marinara sauce across it.

Stir together the ricotta, both cheeses, parsley, eggs, salt, and pepper until really smooth and creamy.

Carefully fill each cooled manicotti tube from both ends with the cheese mix. A spoon, pastry bag, or even clean fingers work great.

Place the filled pasta shells in one layer over the sauce in the pan. Spread the remaining marinara evenly on top.

Cover the pan with foil and bake for 40 minutes. Take off the foil, sprinkle extra mozzarella on top if you'd like, and bake another 5-10 minutes uncovered till it’s all melted.
