Rocky Road Chocolate Cookies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 teaspoon of vanilla essence
02 - 2 big eggs
03 - 1/2 cup of granulated sugar
04 - 1 cup of chilled butter, diced
05 - 1 cup of packed brown sugar

→ Dry Ingredients

06 - 3/4 teaspoon of baking soda
07 - 1 teaspoon of corn starch
08 - 1/2 cup of unsweetened cocoa powder
09 - 1/2 teaspoon of salt
10 - 1 cup of cake flour
11 - 1 1/2 cups of regular flour

→ Mix-ins

12 - 3/4 cup of roughly chopped cashews
13 - 2 cups of tiny marshmallows
14 - 1 3/4 cups of semi-sweet chocolate morsels

# Instructions:

01 - Fire up the oven to 410°F and whip together the butter and sugars until fluffy for about four minutes.
02 - Throw in the eggs and vanilla and beat for a minute.
03 - Gently stir in the dry stuff. Mix in the chocolate, marshmallows, and cashews after that.
04 - Shape dough into 5–6 oz balls. Optional: stick some extra marshmallows and chips on top.
05 - Let them bake for 9 to 11 minutes. Gather up the gooey marshmallow edges back toward the center while warm. Let cool for 15 minutes.

# Notes:

01 - You can swap cake flour with all-purpose flour if needed.
02 - Using a light metallic baking tray works better.
