Ranch Chicken Pasta (Print Version)

# Ingredients:

→ Base

01 - 1 1/2 lbs chicken breasts, no skin or bones
02 - 8 chopped bacon slices
03 - 10 ounces penne noodles

→ Sauce

04 - 1 cup sour cream
05 - 2 cups chicken stock
06 - 1 ranch seasoning packet
07 - 4 ounces cream cheese
08 - 2 cups cheddar cheese, shredded

→ Aromatics & Seasonings

09 - 1/2 onion, finely chopped
10 - 1 tsp black pepper
11 - 2 tsp dried parsley
12 - 2 or 3 minced garlic cloves
13 - A sprinkle of salt (1 tsp)
14 - Green onions, chopped for topping

# Instructions:

01 - Boil pasta until just tender, drain, and rinse under cold water to stop cooking.
02 - In a pan, fry up the chopped bacon till crispy. Set it aside, leaving a tablespoon of the grease behind.
03 - Using that bacon grease, sear the chicken cubes with some salt and pepper until golden brown. Toss in onions until they soften, then quickly stir in garlic at the end.
04 - Mix together the broth, sour cream, cream cheese, ranch mix, bacon, and other seasonings. Let it bubble gently then lower the heat.
05 - Add cheddar and pasta to the sauce, let it all simmer for about 5 minutes. Sprinkle green onions on top before serving.

01 - You can prepare it ahead of time and warm it up.
02 - Want a creamier texture? Just add extra broth.
