Pork and Vegetables (Print Version)

# Ingredients:

→ Pork

01 - 1 to 1.2 kg of pork (like loin or shoulder)
02 - Season with salt, as needed
03 - Add black pepper, to your liking
04 - Sprinkle paprika, as much as you want

→ Vegetable Layer

05 - 1 big carrot, sliced thin
06 - Dice 2 onions
07 - 200 grams mushrooms, chopped into slices
08 - Oil for frying veggies
09 - A bit of salt, as per taste
10 - Dash of pepper, as needed

→ Mashed Potatoes

11 - 6 medium potatoes, peeled and cut into chunks
12 - Enough water for boiling
13 - Salt, adjust to taste
14 - 200 grams of Suluguni or another cheese you prefer
15 - Use butter as needed
16 - Warm up milk and add to preference
17 - Garnish with chopped parsley

# Instructions:

01 - Get the oven warmed up to 180-190°C. Use salt, black pepper, and paprika to coat both sides of the pork evenly. Lay the meat on a baking dish or tray.
02 - Start by heating some oil in a pan on a medium flame. Toss in the onions and sauté till they begin to soften. Follow up with carrot slices and let them fry a bit longer. Lastly, add in the mushrooms and fry everything together until they're soft. Season as you go with some salt and pepper.
03 - Arrange the cooked veggies over the pork in the same baking tray. Pop it into the preheated oven and let it bake for about 40 minutes at a temperature of 180-190°C.
04 - Cook the potato chunks in salted boiling water until they're fork-soft, which takes about 15-20 minutes. After draining, blend them with butter and warm milk until creamy. Throw in the cheese and stir until it's melted. Use parsley as a finishing touch.
05 - Once 40 minutes are up, see if the pork is cooked through. If it’s ready, spoon the mashed potatoes either on top or beside the pork. Crank the oven's heat up to 220°C and bake for another 15-20 minutes, until you get a golden, slightly crisp surface.

# Notes:

01 - Make sure the pork is coated generously with seasonings.
02 - Stick a meat thermometer into the meat; it’s done at 70°C or higher.
03 - Mix in garlic or fresh herbs for tastier mashed potatoes.
04 - If you want crispy potatoes, turn on the oven's grill for a few minutes.
