Black Pepper Mushrooms (Print Version)

# Ingredients:

→ Chicken

01 - 2 boneless chicken breasts, sliced thin and skin removed
02 - 1 tablespoon cornstarch
03 - 1 teaspoon salt
04 - 1/2 teaspoon freshly cracked black pepper

→ Vegetables

05 - 1 bell pepper (red or green), sliced into strips
06 - 1 medium onion, cut into slices
07 - 8 ounces of shiitake or button mushrooms, sliced
08 - 2 chopped green onions for an optional garnish
09 - 3 cloves of garlic, minced

→ Sauce

10 - 1 tablespoon soy sauce
11 - 1 tablespoon oyster sauce
12 - 1 teaspoon honey
13 - 1/2 teaspoon rice-based vinegar
14 - 1 teaspoon ground black pepper
15 - 2 tablespoons cooking oil, divided

# Instructions:

01 - Mix the chicken slices in a bowl with cornstarch, salt, and black pepper. Toss until everything looks evenly covered.
02 - Heat a big pan on medium-high and drizzle in 1 tablespoon of oil. Stir-fry the chicken for 4-5 minutes until it’s browned. Take it out and put it aside for later.
03 - In the same pan, pour in the remaining tablespoon of oil. Cook the onions and bell pepper for 2-3 minutes, then toss in the mushrooms and garlic, cooking another few minutes.
04 - Whisk together the soy sauce, oyster sauce, honey, rice vinegar, and black pepper in a small bowl until it’s well blended.
05 - Add the sauce into the pan with the veggies, stir the chicken back in, and toss everything to coat evenly. Cook for 1-2 minutes until warmed up.
06 - Sprinkle green onions on top if you want. Serve it hot over rice or some noodles.
