Blueberry Oatmeal Muffins (Print Version)

# Ingredients:

→ Wet Ingredients

01 - Milk, 1/4 cup
02 - Honey or maple syrup, 1/3 cup
03 - Vegetable oil, 2 tablespoons
04 - Vanilla extract, 1 teaspoon
05 - Large egg, 1
06 - Plain greek yogurt, 1 cup

→ Dry Ingredients

07 - Baking soda, 1/2 teaspoon
08 - Salt, 1/4 teaspoon
09 - Ground cinnamon, 1 teaspoon
10 - Old fashioned rolled oats, 1 cup
11 - Baking powder, 1 teaspoon
12 - All-purpose flour, 3/4 cup

→ Mix-ins

13 - 1 cup of blueberries (fresh or frozen)

# Instructions:

01 - Set your oven to 375°F. Grease a muffin tin or pop in some paper liners.
02 - Stir greek yogurt, milk, honey, vanilla extract, oil, and the egg together in a big bowl until smooth.
03 - In a medium bowl, whisk up oats, flour, baking powder, cinnamon, salt, and baking soda.
04 - Gently mix the dry stuff into the wet until just combined. Use a light hand to fold in blueberries so you don’t squish them.
05 - Scoop batter into the muffin tin, filling each about 1/4 cup full. Bake for 18 to 20 minutes. Check doneness when a toothpick comes out clear.
06 - Let them sit in the muffin pan for about 10 minutes. Then move to a rack to finish cooling.

# Notes:

01 - You can use either frozen or fresh blueberries for this.
02 - Swap honey with maple syrup if you want!
