Mississippi Sin Quiche (Print Version)

# Ingredients:

→ Base

01 - 4-5 big eggs, whisked gently
02 - A couple of fresh corn tortillas, chopped into strips or squares
03 - 3 tablespoons of cooking oil

→ Fresh Vegetables

04 - One medium ripe tomato, chopped
05 - A small red bell pepper, diced into small pieces
06 - A small white or yellow onion, diced finely
07 - One fresh jalapeño pepper, chopped into tiny bits

→ Cheese & Seasonings

08 - Shredded Monterey Jack or pepperjack cheese (½ cup)
09 - A pinch of sea salt and a bit of freshly cracked black pepper

→ Optional Toppings

10 - Sliced fresh peppers for a crisp bite
11 - A ripe avocado, sliced
12 - Your favorite spicy hot sauce
13 - Sprinkle of red chili flakes for a kick

# Instructions:

01 - Heat some oil in a skillet. Toss in the tortilla pieces and fry them, flipping occasionally, until they are crispy and golden, around 4-5 minutes. Take them out, drain on paper towels, and sprinkle salt while still warm.
02 - Add peppers and diced onion to the same pan with the oil left behind. Stir and cook for about 5 minutes, until the onions soften and the mixture smells delicious.
03 - Throw in the chopped tomato and pour the gently beaten eggs over the cooked veggies. Toss gently and season with a bit of salt and some pepper.
04 - Cook the egg mixture lightly, stirring now and then, for about 2-3 minutes until the eggs are creamy and just cooked.
05 - Remove the skillet from heat. Fold in the cheese and the prepared crispy tortilla pieces. Finish by adding your favorite toppings like avocado slices, chili flakes, or hot sauce, and serve right away.

01 - To save time, swap fresh tortillas for crushed tortilla chips.
02 - Mix in some chorizo or cooked meat if you want something filling.
03 - A spoon of salsa on top adds extra punch to the flavor.
