Marry Me Sausage Pasta (Print Version)

# Ingredients:

01 - 8 oz of ditalini pasta.
02 - 1-2 tbsp of avocado oil.
03 - 8 oz of ground mild Italian sausage.
04 - 1/2 cup finely diced sweet onion.
05 - 2 minced garlic cloves.
06 - 1-1.5 tbsp of tomato paste.
07 - A pinch of kosher salt, to taste.
08 - A dash of black pepper, to taste.
09 - 1/2-3/4 cup low-sodium chicken stock.
10 - 3/4-1 cup heavy whipping cream.
11 - 1/2 cup grated Parmesan cheese.
12 - Crushed red pepper flakes for topping.

# Instructions:

01 - Boil ditalini in salty water until slightly firm. Drain it, toss with a little oil, and leave it aside.
02 - Cook the sausage in oil on medium-high. Add garlic and onion, then cook till onions turn soft.
03 - Mix in tomato paste and let it darken for a few minutes. Add salt and pepper. Pour in broth to deglaze, cook it down until reduced by half.
04 - Pour in cream and mix with Parmesan. Stir gently over low heat till the cheese is melted.
05 - Stir the pasta into the sauce. Toss until it’s all coated evenly. Sprinkle red pepper flakes on top.

# Notes:

01 - You can add more broth to make the sauce thinner.
02 - Cook the pasta firm for the perfect bite.
03 - Cook the tomato paste longer for a richer taste.
