Chili Lime Chicken (Print Version)

# Ingredients:

→ Spiced Chicken

01 - 2 large chicken breasts (about 1-1.2 lbs)
02 - 1 tbsp olive oil
03 - 1/2 tsp cumin powder
04 - 1/2 tsp smoked paprika
05 - 1/4 tsp table salt
06 - 1/4 tsp ground black pepper

→ Lime & Chili Dressing

07 - 1/4 cup extra virgin olive oil
08 - 1/2 cup chopped fresh cilantro
09 - Juice from 1 fresh lime
10 - 1 tbsp honey
11 - 2 garlic cloves, finely chopped
12 - 1/2 tsp red pepper flakes
13 - 1 thinly sliced red chili
14 - A pinch of salt

# Instructions:

01 - Stir together everything for the marinade in a mixing bowl until it’s blended.
02 - Cut chicken breasts lengthwise and into smaller chunks. Toss the pieces in a big bowl with olive oil, a spoonful of the marinade, and your spices.
03 - Warm olive oil in a skillet over medium heat. Cook chicken for 10-12 minutes, flipping midway. Drizzle marinade over the chicken during the last few minutes.
04 - Move cooked chicken to a plate and pour the rest of the marinade on top.

# Notes:

01 - You can marinate the chicken hours in advance or prep and cook it right away.
02 - Goes great in tacos, over a salad, or served as the main meal.
03 - Add more or less chili to tweak how spicy it gets.
