Turn your oven on to 400°F. Cover a baking tray with parchment paper.

Stir together sausage, cheese, breadcrumbs, 1 egg, and thyme in a large bowl.

Beat the other egg with a splash (1 tablespoon) of water.

Flatten pastry and slice into long, thin strips (you'll get four).

Spread sausage mixture along the center. One side gets a layer of mustard, the other a coat of egg wash.
