# Ingredients:

01 - 1/2 cup panko crumbs.
02 - 1/2 cup grated sharp cheddar.
03 - 1/2 tablespoon fresh thyme leaves.
04 - 2 eggs, separated.
05 - 2 tablespoons Dijon mustard.
06 - 1 pound sage and breakfast pork sausage.
07 - 17.3 oz puff pastry (2 individual sheets).
08 - 2 tablespoons bagel seasoning blend.
09 - Hot honey, to drizzle on top.

# Instructions:

01 - Turn your oven on to 400°F. Cover a baking tray with parchment paper.
02 - Stir together sausage, cheese, breadcrumbs, 1 egg, and thyme in a large bowl.
03 - Beat the other egg with a splash (1 tablespoon) of water.
04 - Flatten pastry and slice into long, thin strips (you'll get four).
05 - Spread sausage mixture along the center. One side gets a layer of mustard, the other a coat of egg wash.
06 - Wrap up the pastry tightly, sealing the edges with the egg mix. Lay seam-side down.
07 - Slice pastry logs into 1 1/2-inch pieces and score the tops lightly.
08 - Brush the tops with egg wash, sprinkle seasonings, and bake them for 18-20 minutes till golden and crispy.

# Notes:

01 - You can freeze these before putting them in the oven.
02 - Skip the cheese for a dairy-free option.
03 - These taste great hot with honey drizzled over.
