Ultimate Grilled Cheese (Print Version)

# Ingredients:

01 - 3.5 oz sharp cheddar cheese, shredded fresh
02 - 2 thick slices of sourdough bread
03 - 1 oz Gruyère cheese, shredded fresh
04 - 2 teaspoons mayo
05 - 1 tablespoon butter (unsalted)

# Instructions:

01 - Slice bread nice and thick (1/2 inch). Grate cheeses and warm the pan on low heat.
02 - Spread mayo over just one side of each piece of bread (1 teaspoon per slice).
03 - Drop butter into the skillet and let it melt, put bread mayo-down first, load on the cheese, and cover with the other slice mayo-up.
04 - Pop on a lid and let the bottom side toast for 2-3 minutes until golden.
05 - Turn the sandwich over and cook the second side covered, about 2 minutes, until golden and cheesy goodness melts.
06 - Slice it at an angle and enjoy while the cheese is gooey and hot!
