Garlic Mushroom Pasta (Print Version)

# Ingredients:

→ Base

01 - 1/2 medium onion, diced
02 - 3 cloves garlic, finely chopped
03 - 4 oz dry pasta
04 - 3 tbsp butter, use in two steps
05 - 1 tbsp olive oil
06 - 1/2 tsp Dijon mustard
07 - 8 oz cremini mushrooms, cut into slices

→ Sauce

08 - 1/4 cup broth (chicken or veggie, or even white wine)
09 - Juice from 1/2 lemon
10 - Half a lemon’s zest
11 - 1/2 cup parmesan cheese, grated fresh
12 - Salt and pepper, season to taste
13 - 2 tbsp fresh parsley, chopped up

# Instructions:

01 - Get your pasta cooked in salty boiling water, just until it’s perfectly firm.
02 - In a pan with butter and oil, gently caramelize mushrooms and onions over 8–10 minutes.
03 - Drop in the garlic, Dijon, and rest of the butter. Let it cook briefly for about a minute.
04 - Pour in lemon juice and broth; simmer for 60 seconds.
05 - Off the heat, mix in parmesan, parsley, and a splash of the pasta’s cooking water. Toss the pasta in.

# Notes:

01 - You can double it, but mushrooms might need extra time to brown.
02 - Great for 2 as a meal, 4 if it’s a side.
