Taco Casserole Bake (Print Version)

# Ingredients:

→ Base

01 - 1 tbsp olive oil
02 - 1/2 diced medium onion
03 - 1 pound lean ground beef

→ Seasonings

04 - 1 tbsp chili powder
05 - 1/2 tsp garlic powder
06 - 1/2 tsp cumin

→ Casserole Ingredients

07 - 1 (14 oz) can black beans, rinsed and strained
08 - 2 cups (split up) of shredded Mexican or cheddar cheese blend
09 - 2 cups crushed Nacho Cheese Doritos
10 - 1 (15.5 oz) jar of salsa
11 - 1 (12 oz) can sweet corn, drained of liquid

→ Optional Toppings

12 - Choose from: fresh cilantro, chopped lettuce, sour cream, tomatoes, avocado, black olives, scallions

# Instructions:

01 - Set the oven to 350°F and place the rack in the center spot.
02 - In a pan on medium-high heat, warm the oil. Toss in the beef and break it apart as it browns for about 5 minutes. Add onions and spices, cooking for another 5 minutes.
03 - Use a 9x13 pan to create a layer of crushed Doritos at the base.
04 - Drain any fat from the cooked beef. Combine the beef with the salsa, corn, beans, and half the cheese in the pan until the cheese is melted. Pour this over the Doritos in the dish.
05 - Top it all with the rest of the cheese. Leave it uncovered and bake it for 15-20 minutes, or until the cheese is bubbling and nicely melted. Serve while hot with any toppings you like.
