Mango Cucumber Mix (Print Version)

# Ingredients:

01 - 2 ripe, sweet mangoes cut into friendly-sized chunks
02 - 1/4 cup of cilantro leaves, chopped roughly
03 - 1/4 red onion, shaved super thin
04 - 1 cucumber, chopped into small bits
05 - 1/2 of a jalapeño, chopped fine (leave out if you’re not into heat)

→ For the Sauce

06 - 1 tablespoon of fresh lime squish
07 - 1 teaspoon of honey (maple syrup works too for vegan vibes)
08 - 1 tablespoon nice-quality olive oil
09 - 1/4 teaspoon of fresh ground black pepper
10 - 1/2 teaspoon of sea salt

# Instructions:

01 - Grab a big bowl and gently mix together the mango chunks, onion, cucumber bits, and cilantro.
02 - In a smaller dish, whisk together that olive oil, lime juice, honey (or maple syrup), salt, and pepper till it’s smooth and a little creamy.
03 - Pour the dressing onto the mango mix and lightly fold it all together so everything gets coated.
04 - If you like some zing, sprinkle in the chopped bits of jalapeño now and give it one last gentle stir.
05 - Stick the salad in the fridge for 15-20 minutes so all those amazing flavors can soak together.
