Tomato Herb Fritters (Print Version)

# Ingredients:

→ Fresh Produce

01 - Red onion, diced small, 1/2
02 - Two large garlic cloves, finely grated
03 - About 250g of chopped-up large tomatoes, 2

→ Fresh Herbs & Seasonings

04 - Zest from a single lemon
05 - A bit of black pepper for taste
06 - Approximately 15g of finely cut fresh parsley, 1/2 bunch
07 - Roughly 10g of chopped dill, 1/2 bunch
08 - Add salt (about 1/2 teaspoon) or season to taste

→ Dry Ingredients

09 - 85g of plain all-purpose flour
10 - A half teaspoon of baking powder

# Instructions:

01 - Grab a big mixing bowl and toss in the finely chopped tomatoes. This mix will be the main part of your fritters.
02 - Throw the onion, garlic, parsley, dill, lemon zest, and seasonings into the bowl with the tomatoes. Stir in the flour and baking powder bit by bit until it starts looking like a thick batter.
03 - Pour enough olive oil to coat the pan, then warm it on medium heat. Scoop a big spoonful of the batter into the pan and cook a few minutes until it's browned underneath. After that, flip it over and let the other side turn a golden color.
