Crispy Fried Eggplant (Print Version)

# Ingredients:

01 - 2 tablespoons of avocado oil
02 - 1 big eggplant, peeled and cut into chunks about an inch wide

→ Seasonings

03 - 1/2 teaspoon smoked paprika
04 - 1/4 teaspoon kosher salt, plus extra for sprinkling later
05 - 1 teaspoon dried rosemary
06 - 1/2 teaspoon garlic powder
07 - 1 teaspoon dried thyme

# Instructions:

01 - Sprinkle salt on the cubed eggplant and let it sit for 15-30 minutes. Use paper towels to blot away the moisture.
02 - Pour avocado oil over the eggplant, then add all the spices. Mix thoroughly until everything's evenly coated.
03 - Set your air fryer to 400°F. Cook for about 18 minutes, shaking the basket halfway through to make sure all sides get crispy.
