Cut the eggplant into rounds about half an inch thick. Make small cuts in the middle so the sauce can soak in.

Combine soy sauce, garlic, sugar, avocado oil, and chili oil (if using) in a shallow dish and stir it well.

Lay eggplant slices on parchment paper in the air fryer. Spread the sauce on top. Air fry at 350°F for 15 mins. For extra crunch, broil for 2 more mins if you’d like.
