Air Fryer Garlic Eggplant (Print Version)

# Ingredients:

→ Main

01 - 1 large eggplant

→ Sauce

02 - 2 tablespoons minced garlic (from about 3 cloves)
03 - 2 tablespoons white sugar
04 - 2 tablespoons avocado oil
05 - 1 tablespoon chili oil (optional)
06 - 2 tablespoons low sodium soy sauce

# Instructions:

01 - Cut the eggplant into rounds about half an inch thick. Make small cuts in the middle so the sauce can soak in.
02 - Combine soy sauce, garlic, sugar, avocado oil, and chili oil (if using) in a shallow dish and stir it well.
03 - Lay eggplant slices on parchment paper in the air fryer. Spread the sauce on top. Air fry at 350°F for 15 mins. For extra crunch, broil for 2 more mins if you’d like.

# Notes:

01 - Bake in the oven at 375°F for 30 minutes if preferred.
