Creamy Beef Noodle Bake (Print Version)

# Ingredients:

→ Base

01 - Uncooked egg noodles (12 ounces)
02 - One pound of ground beef
03 - Finely chopped yellow onion (1)
04 - Two minced garlic cloves

→ Sauce & Seasonings

05 - 15 ounces of tomato sauce
06 - One can of diced tomatoes, drained (15 ounces)
07 - Worcestershire sauce (1 tbsp)
08 - 2 teaspoons smoked paprika
09 - Season with red pepper flakes as preferred
10 - Add salt and pepper to your liking

→ Creamy & Cheese Elements

11 - 8 ounces of sour cream
12 - Small curd cottage cheese (8 ounces)
13 - Half a cup of shredded Parmesan
14 - 2 cups of shredded cheddar cheese
15 - Fresh parsley to top it off

# Instructions:

01 - Bring salted water to a boil, toss in the egg noodles, and cook until just tender. Rinse under cool water and toss lightly with olive oil so they don't stick.
02 - Start by browning the ground beef in a pan, crumble it up while cooking, and drain any grease when done.
03 - Stir in the onion and garlic with the beef. Cook for a couple of minutes until you really smell the garlic.
04 - Mix in the tomato sauce, diced tomatoes, Worcestershire sauce, smoked paprika, red pepper flakes, and some salt and pepper. Let it cook down for about 5 minutes until it thickens up.
05 - Toss together sour cream, cottage cheese, Parmesan, and your cooked noodles in a big bowl.
06 - Take a 9x13 dish and layer half the noodle mix, then half the meat sauce, and finish with a bit of cheddar. Do another round of noodles, sauce, and end with a big top layer of cheddar.
07 - Pop the dish into a 350°F oven and bake without covering it for 25 to 30 minutes. You're looking for bubbling, gooey cheese.
08 - Sprinkle with fresh parsley if that's your thing, and grab a plate while it's still warm.

# Notes:

01 - Add a kick with some jalapeños or a sprinkle of cayenne pepper
02 - Toss in some bacon pieces for a smoky edge
03 - Great to make ahead for family gatherings
04 - Heats back up nicely for quick leftovers
