Bring salted water to a boil, toss in the egg noodles, and cook until just tender. Rinse under cool water and toss lightly with olive oil so they don't stick.

Start by browning the ground beef in a pan, crumble it up while cooking, and drain any grease when done.

Stir in the onion and garlic with the beef. Cook for a couple of minutes until you really smell the garlic.

Mix in the tomato sauce, diced tomatoes, Worcestershire sauce, smoked paprika, red pepper flakes, and some salt and pepper. Let it cook down for about 5 minutes until it thickens up.

Toss together sour cream, cottage cheese, Parmesan, and your cooked noodles in a big bowl.

Take a 9x13 dish and layer half the noodle mix, then half the meat sauce, and finish with a bit of cheddar. Do another round of noodles, sauce, and end with a big top layer of cheddar.

Pop the dish into a 350°F oven and bake without covering it for 25 to 30 minutes. You're looking for bubbling, gooey cheese.
