Turkish Eggs Garlicky Yogurt (Print Version)

# Ingredients:

→ Base

01 - 2 eggs
02 - 1-2 garlic cloves, chopped finely
03 - 1 cup plain Greek yogurt at room temperature
04 - 1-2 tablespoons vinegar, optional

→ Spiced Oil

05 - 2 teaspoons red pepper flakes or Aleppo pepper
06 - 3 tablespoons extra virgin olive oil

# Instructions:

01 - Stir the yogurt with a little salt and minced garlic until smooth. Spoon into two bowls.
02 - In a medium pot, bring water to boil. Add some vinegar if you'd like.
03 - Break each egg into a tiny sieve to remove extra whites, then transfer it into a ramekin.
04 - Swirl the water, gently drop the egg into the center, and let it cook 2-3 minutes. Use a slotted spoon to transfer it to a plate lined with parchment paper. Do the same with the second egg.
05 - In a small pan over medium heat, warm the olive oil with the pepper.
06 - Put the poached eggs on top of the yogurt, pour over the spiced oil, and enjoy with crusty bread while warm.

# Notes:

01 - A classic dish for Turkish breakfasts.
02 - Make sure to eat right away while eggs are hot.
03 - Pairs nicely with rustic bread for scooping.
