Stir the yogurt with a little salt and minced garlic until smooth. Spoon into two bowls.

In a medium pot, bring water to boil. Add some vinegar if you'd like.

Break each egg into a tiny sieve to remove extra whites, then transfer it into a ramekin.

Swirl the water, gently drop the egg into the center, and let it cook 2-3 minutes. Use a slotted spoon to transfer it to a plate lined with parchment paper. Do the same with the second egg.

In a small pan over medium heat, warm the olive oil with the pepper.

Put the poached eggs on top of the yogurt, pour over the spiced oil, and enjoy with crusty bread while warm.
