Chickpea Mediterranean Bowl (Print Version)

# Ingredients:

01 - 1 teaspoon sea salt.
02 - 1 teaspoon Dijon mustard.
03 - 1 garlic clove, grated.
04 - Freshly ground black pepper.
05 - 2 tablespoons extra-virgin olive oil.
06 - 2 tablespoons fresh lemon juice.
07 - 1/4 cup chopped fresh dill.
08 - 1/4 cup chopped fresh mint, plus extra for topping.
09 - 1/2 cup chopped fresh parsley.
10 - 1/2 cup kalamata olives, pitted and cut in half.
11 - 1/2 English cucumber, chopped into small cubes.
12 - 3 cups chickpeas, cooked, rinsed, and drained.
13 - 2 cups red and yellow grape tomatoes, sliced in half.
14 - 1/2 cup pickled red onions.

# Instructions:

01 - In a big bowl, stir the olive oil, freshly squeezed lemon juice, garlic, mustard, salt, and a bit of pepper until everything combines.
02 - Toss the chickpeas, tomatoes, cucumber cubes, pickled onions, and olives into the dressing-covered bowl.
03 - Stir in the parsley, mint, and dill. Add more seasoning if you feel like it. Top it with some mint leaves for flair.
