Cheesy Chicken Garlic Bread (Print Version)

# Ingredients:

01 - 250g mix of mozzarella and cheddar
02 - 2-3 garlic-flavored baguettes
03 - 1 small red onion, thinly chopped
04 - 400g pack of chicken mini fillets
05 - 1 red bell pepper, finely sliced
06 - 190g jar of red pesto sauce

# Instructions:

01 - Set oven to 200°C/400°F. Fry chicken in oil, about 3-4 minutes per side, until browned.
02 - Sauté the onion and pepper for 12 minutes, letting them soften up. Toss chicken back into the pan and coat everything with pesto.
03 - Cut the baguettes down the middle lengthwise, then bake for 7 minutes.
04 - Spoon the chicken filling into the baguettes, then sprinkle with the cheese mixture.
05 - Pop everything in the oven for 5-6 minutes, just until the cheese turns golden and bubbly.

# Notes:

01 - Keep chilled in the fridge for up to 3 days.
02 - Wrap in foil and store in freezer if needed.
03 - Warm up at 180°C for 12 to 14 minutes before serving.
