Chicken Avocado Toastie (Print Version)

# Ingredients:

→ Main

01 - 2 chicken breasts, no skin or bones
02 - Pepper and salt, use as preferred
03 - 1 tbsp olive oil
04 - 1 avocado, cut into slices
05 - 4 cheese slices (cheddar, provolone, or Swiss)

→ Bread & Spreads

06 - 4 bread slices (ciabatta or sourdough)
07 - 1 tbsp Dijon mustard
08 - 2 tbsp mayo
09 - Butter or oil for frying the sandwiches

→ Vegetables

10 - 1 tomato, cut into slices
11 - 1 small red onion, sliced thinly

# Instructions:

01 - Heat oil, season the chicken, and cook for 6-7 minutes on each side. Let it cool before slicing.
02 - Slice up avocado, tomatoes, cheese, and onions to get them ready.
03 - Spread mustard and mayo over the bread slices. Stack on chicken, onions, tomatoes, avocado, and cheese.
04 - Fry the sandwiches in a bit of oil or butter for 3-4 minutes a side. Keep going until they're golden and the cheese is gooey.

# Notes:

01 - Keep leftovers in a sealed-up container.
02 - Use the oven to warm them up so they stay toasty.
