Cheesy Cauliflower Tots (Print Version)

# Ingredients:

→ Base

01 - Plain cottage cheese (1 cup)
02 - Bread crumbs (½ cup)
03 - Cauliflower (1 head)

→ Cheese & Aromatics

04 - Scallions (¼ cup, chopped)
05 - Grated parmesan cheese (½ cup)

→ Seasonings

06 - Salt (½ teaspoon)
07 - Garlic powder (½ teaspoon)
08 - Onion powder (½ teaspoon)
09 - Black pepper (¼ teaspoon)

→ Binding

10 - Egg (1)

# Instructions:

01 - Set your oven to 400°F (200°C) and let it heat up.
02 - Boil or steam your cauliflower for around 5-7 minutes until soft, then let it drain and cool down a bit.
03 - Mash the cooled cauliflower, then stir in the cottage cheese, egg, and seasonings so it's all mixed nicely.
04 - Slowly blend in breadcrumbs until the mixture holds together, then shape into evenly-sized tots.
05 - Line a baking sheet with parchment paper, place the tots on it, and bake for about 20-25 minutes until golden and crispy.
06 - Give them a couple of minutes to cool off before eating.

# Notes:

01 - A lighter swap for traditional tater tots.
02 - Great as a snack or side dish.
03 - Make tots the same size for even cooking.
04 - The mixture shouldn't be too dry, but it should stick together.
