Cheese Rosemary Pretzels (Print Version)

# Ingredients:

→ Dough

01 - 1 teaspoon of salt
02 - 1 cup of warm water
03 - 2½ cups of plain flour
04 - 1 packet of dry yeast, active
05 - 1 tablespoon of sugar
06 - 2 tablespoons of melted butter, unsalted

→ Filling and Toppings

07 - 1 egg for brushing
08 - Chopped rosemary (1 tablespoon)
09 - Grated Parmesan (½ cup)
10 - Shredded mozzarella (1 cup)
11 - Coarse salt to sprinkle

→ Boiling Solution

12 - 10 cups of water
13 - ¼ cup of baking soda

# Instructions:

01 - Mix warm water with yeast and sugar. Stir in melted butter, salt, and flour. Knead for 5-7 minutes until it looks smooth.
02 - Let the dough sit covered for an hour. It should grow to twice its size.
03 - Cut the dough into 8 pieces, roll them into ropes. Stuff with mozzarella, then twist into pretzel shapes.
04 - Drop the pretzels into the baking soda water. Cook for 1-2 minutes on each side.
05 - Brush with a beaten egg, add your toppings. Bake at 425°F for 12-15 minutes until golden brown.

01 - Tastes best when warm.
02 - Water for yeast should be warm but not too hot.
