# Composition:

→ Main Ingredients

01 - 5 cups (20 oz) of uncooked cheese tortellini
02 - 1 cup fresh spinach, roughly chopped
03 - 8 oz of small mozzarella balls
04 - 10 oz of cherry tomatoes, sliced in half
05 - 1/4 cup fresh basil, finely chopped

→ Dressing

06 - 3-4 garlic cloves, finely minced
07 - 1/2 cup extra virgin olive oil
08 - 2 tablespoons of balsamic vinegar
09 - 1/2 teaspoon each of salt and black pepper
10 - 3/4 teaspoon of Italian herb mix
11 - Optional: A drizzle of balsamic reduction

# Étapes de réalisation:

01 - Follow the cooking directions on the tortellini package until it’s cooked but still firm to bite. Cool it under some running water, and as it drains, get the rest of the ingredients ready by chopping and prepping.
02 - Get a big bowl and mix the cooled tortellini with the spinach, tomato slices, mozzarella balls, garlic, and basil. Pour the olive oil and balsamic vinegar on top. Sprinkle in the Italian herbs, salt, and pepper. Give everything a good toss so it's evenly coated.
03 - Keep it chilled until you’re ready to eat. When it’s serving time, stir again to make sure the olive oil coats everything nicely. Add a touch more oil if it seems dry and drizzle some balsamic glaze on top if you like.
