Brie Apple Chicken (Print Version)

# Ingredients:

→ Stuffing & Chicken

01 - 4 boneless chicken breasts
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper
04 - 1 Honeycrisp apple, sliced thin into moon shapes
05 - 4 ounces brie cheese, chilled and sliced thin

→ Glaze with Apple Cider

06 - 1 cup of apple cider or juice
07 - 2 tablespoons maple syrup
08 - 1/2 tablespoon minced garlic (around 2 cloves)
09 - 1 teaspoon Dijon mustard
10 - 2 teaspoons fresh thyme
11 - 1/2 teaspoon kosher salt

# Instructions:

01 - Set your oven temperature to 375°F. Line a baking sheet with parchment, or spray a broil-friendly skillet with nonstick spray and set it aside.
02 - Slice each chicken breast open horizontally without cutting it fully in half. Sprinkle some salt and pepper inside, add 7-9 apple slices and 3-4 brie slices, and then fold it closed.
03 - Move the stuffed chicken to your pan and bake for 25-30 minutes until nearly cooked through.
04 - While you're baking, mix everything for the glaze in a tiny saucepan. Heat it on medium to let it reduce and thicken into a syrup for about 12-15 minutes.
05 - Turn the oven to broil. Brush the chicken with the glaze and broil for 10-12 minutes, keeping a close eye so it doesn’t burn, until the inside reaches 165°F. Spoon leftover glaze over the chicken when serving warm.

# Notes:

01 - Slice brie while cold to keep it neat
02 - Don’t walk away during broiling, as the glaze can burn quickly
03 - For each chicken breast, you’ll need 7-9 slices of apple and 3-4 of brie
