Tater Tot Burritos (Print Version)

# Ingredients:

→ Core Ingredients

01 - 2 heaping cups of frozen tater tots
02 - 8 breakfast sausage links, casings removed
03 - 8 eggs, whisked lightly
04 - ⅓ cup of cream (half-and-half)
05 - Two spoonfuls of olive oil
06 - Salt and pepper to taste

→ Filling Set-Up

07 - 1 can (16 oz) of mashed refried beans
08 - 8 tortillas, each 8 inches wide
09 - A cup of shredded cheddar cheese
10 - A cup of Monterey Jack, shredded
11 - 2 Roma tomatoes, chopped small
12 - ¼ cup of fresh cilantro, finely cut

# Instructions:

01 - Set oven to 400°F. Bake the tots for 20 to 25 minutes, making sure they’re crispy and browned.
02 - Warm the olive oil in a skillet over medium-high heat. Brown the sausage for 3-5 minutes, breaking it apart as it cooks. Leave about a tablespoon of the fat in the pan.
03 - Using the same skillet, cook the eggs on medium heat. Add the cream once the eggs start to firm up. Sprinkle with a bit of salt and pepper. Stir for 3-5 minutes until they’re soft and smooth.
04 - Spread beans evenly on each tortilla. Pile on the tots, sausage, eggs, both cheeses, diced tomatoes, and cilantro. Fold the sides in and roll it up tightly.
05 - Place the burritos seam side down on a baking sheet. Bake for 12-15 minutes until the filling is warmed and the cheese has melted.

# Notes:

01 - You can freeze these for up to 3 months if wrapped in foil or plastic.
02 - To reheat a frozen one, zap it in the microwave for 1-2 minutes per side. Skillet or oven toasts it nicely after.
