Preheat the oven to 190°C. Line a baking sheet with parchment paper for assembly.

Slice the pears in half and carefully remove the cores using a melon baller or small spoon. Arrange the pear halves cut side up on the prepared baking sheet.

In a mixing bowl, combine crumbled blue cheese, toasted chopped walnuts, and honey. Stir until uniformly blended.

Spoon the cheese mixture into the cavity of each pear half, pressing gently to compress the filling.

Drizzle balsamic vinegar over the stuffed pears and sprinkle with ground black pepper. Bake for 20 to 25 minutes, until the pears are tender and the cheese melts and bubbles.

Remove from the oven, drizzle each pear with additional honey, and garnish with fresh thyme sprigs. Serve warm for enhanced flavour.
