# Ingredients:

→ Seasoning Blend

01 - 1/4 teaspoon dried thyme
02 - 1/4 teaspoon cayenne pepper
03 - 1/4 teaspoon garlic powder
04 - 1/4 teaspoon onion powder
05 - 1/2 teaspoon smoked paprika
06 - 1/4 teaspoon ground cumin
07 - 1/2 teaspoon kosher salt

→ Core Ingredients

08 - 4 small tortillas (fajita size)
09 - 1 tablespoon cooking oil (olive preferred)
10 - 10 ounces salmon, fillet
11 - 1/2 cup feta cheese crumbles
12 - 2 cups coleslaw mix, pre-shredded
13 - 1 cup diced cherry or grape tomatoes

→ Tangy Spicy Sauce

14 - 1/4 cup mayo
15 - 1 teaspoon lime juice, squeezed fresh
16 - 1 tablespoon your favorite hot sauce
17 - Salt as needed

# Instructions:

01 - Combine all seasoning blend ingredients in a dish. Rub the mix onto the salmon’s flesh side, both sides if there’s no skin. Splash some olive oil on top and let it sit at room temp for around 10 minutes.
02 - On medium heat, warm up oil in a non-stick skillet. Place salmon fillet flesh side down, cook about 3 minutes. Flip it over and fry another couple of minutes until it’s as done as you like.
03 - Leave the salmon to sit for 4-5 minutes. Once cooled slightly, use a fork to break it into chunks or flakes.
04 - Put mayo, hot sauce, and lime juice together in a bowl. Give it a good mix. Adjust seasoning with salt until the taste feels right.
05 - Gently warm up the tortillas. Fill each one with salmon pieces, coleslaw, tomatoes, feta cheese, and a drizzle of spicy mayo.

# Notes:

01 - Fajita tortillas usually measure 4.5-6.5 inches across.
02 - If you don’t have coleslaw mix, shredded cabbage or greens work too.
03 - You can also throw in extras like pickled onion, avocado, jalapeños, cilantro, or chopped green onion.
