Beef & Pork Hearty Ragu (Print Version)

# Ingredients:

→ Base

01 - 1-2 tablespoons olive oil
02 - 2 pounds ground beef
03 - 1 pound pork sausage (without casing)

→ Vegetables & Aromatics

04 - 1 onion, chopped
05 - 2 diced celery ribs
06 - 2 chopped carrots
07 - 2-3 garlic cloves
08 - Leaves from 1 sprig of fresh rosemary

→ Liquids & Tomatoes

09 - 1 cup (250ml) dry red wine
10 - 14oz (400g) canned diced tomatoes
11 - 17.5oz (500ml) crushed tomatoes or passata
12 - 3 tablespoons tomato paste

→ Seasonings

13 - Salt as needed
14 - ½ teaspoon black pepper

# Instructions:

01 - Throw in the ground beef and sausage, crumble it with a spatula, and cook until it’s browned all the way through.
02 - Warm olive oil in a large pan, toss in onion, celery, carrots, garlic, and rosemary. Let it gently cook over low heat for about 10 minutes without letting it get brown.
03 - Stir in the red wine and cook over medium heat for about 10 minutes so it reduces a bit.
04 - Mix in the tomatoes, tomato paste, and season it with salt and pepper. Let it simmer, covered, on low heat for 1.5 hours, giving it a stir every now and then.

# Notes:

01 - If the mixture gets too thick, stir in a splash of water.
02 - You want the sauce to be thick and packed with meat.
03 - Use a good dry red wine, but skip any cooking-specific ones.
