Chewy Banana Bars (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 2 teaspoons vanilla extract
02 - 1 cup mashed bananas (2 medium-sized)
03 - 1 large egg, at room temperature
04 - 3/4 cup light brown sugar
05 - 1/2 cup unsalted butter

→ Dry Ingredients

06 - 3/4 cup mini chocolate chips (save some for topping)
07 - 1/2 teaspoon salt
08 - 1/2 teaspoon baking powder
09 - 1 cup plain flour

# Instructions:

01 - Set the oven to 350°F (177°C). Cover the base and sides of an 8x8 inch pan with parchment paper.
02 - Heat butter in the microwave until it’s liquefied, about a minute. Let it cool for 10-15 minutes until it feels warm but not hot.
03 - In a bowl, blend together the flour, salt, and baking powder.
04 - Whisk melted butter with brown sugar. Stir in the egg, mashed banana, and vanilla until smooth.
05 - Slowly add dry ingredients into the wet mixture while stirring. Mix in most of the chocolate chips, keeping a handful for the top.
06 - Pour the mix into the pan and sprinkle the reserved chips on top. Bake for 30-35 minutes, checking with a toothpick to make sure the middle is cooked.
07 - Once completely cooled, lift out the dessert using the parchment. Slice into portions.

# Notes:

01 - Keep in a sealed container at room temperature for up to 4 days.
02 - You can refrigerate for a week or freeze for a month.
